A manual of cookery arranged to meet the requirements of the City and Guilds and other examining bodies. The recipes are short, with no illustrations, but preceded by useful notes such as how to prevent milk going sour, and including the approximate cost of each recipe (for example, pea soup without meat to serve 8 people could be prepared for 6d). Christina Ross-Smellie was born in Edinburgh in 1852 and died in Florence, Italy, in 1932. At the 1891 census she was a cookery teacher in Brighton, and in 1901 she was running a residential cookery school there. By 1911 she had retired. She lived in London in 1921 and moved to Florence in the late 1920s. Published by George Gill & Sons, London. Undated, but perhaps around 1900. Slim hardcover, yellow boards with red cloth spine. No dust jacket. Marks to covers and yellowed pages, but no inscription or other internal markings, and binding is sound.
